Broccoli cheese soup: a MAJOR hit!

Tonight, I made the most delicious soup in my crock pot! I got the recipe from pinterest but I modified it a little bit. I think it may be better than it was intended to be in the recipe, just sayin'. ;) I thought it tasted JUST like Panera Bread's broccoli cheese soup, which is my favorite.  I will include the recipe at the end of the post (the way I made it), but I will just warn you now: this is comfort food and if you are dieting, run away now! ha!

It was a hit with the kids! Allie especially. Ry was just sort of chill. He ate some if it, but we wasn't ranting and raving the way Allie was. In his defense, he was pretty tired by dinner time and was in bed no later than 7:02...but he will get his chance again, because this will occur on the weekly menu again soon. I think the kids loved best that they could eat their bowls. They got such a kick out of that.

The hubs liked it too! We loved that it tasted EXACTLY like the Panera Bread soup that we love so much. I am hoping to try real cheese next time I make it since Velveeta kinda scares me.  It's not even real cheese. It was the first time I ever tried the stuff, so I thought I'd give it a shot.  It tasted pretty salty, so no need to add that extra ingredient.

Crockpot Broccoli Cheese Soup

You will need:
half an onion, chopped
green onions to taste, chopped ( I probably cut half of the bunch up and threw it in)
2 Tablespoons butter/margarine
1 (10 oz) can of cream of chicken soup
1 1/2 cups milk
1 lb Velveeta, cubed
1 package of frozen broccoli

sour dough bread buns (I find them in the bakery section of my grocery store)

1. Saute onion and green onions in butter, about 4-5 minutes, on medium high, stirring often
2. Add all ingredients to the crock pot and heat on low for 3-4 hours. 

I recommend using a crock pot bag for easy clean up.

For the bread bowls, I just cut around the top like you would a pumpkin, then I used a spoon to carve out the middle. I left all the bread I took out on their plates for their dipping pleasure :) So good and SO EASY!
