First, preheat the oven to 350. Then line your cupcake tin with cupcake liners.
Ingredients:
2 eggs
1/2 cup of vegetable oil
Whisk together the brownie mix, 2
eggs, 1/2 cup vegetable oil, and 1/4 cup water in a bowl. Stir just until
fully mixed, about 50 strokes; set aside.
In a mixing bowl, add:
1 box of strawberry cake mix (or any other flavor would taste yummy, but for the Neapolitan taste, go strawberry)
2 Tablespoons of vegetable oil
1 1/3 cups of water
3 egg WHITES
Mix the cake mix, 2 tablespoons vegetable oil, 1 1/3 cup water, and 3 egg whites in a large bowl with an
electric mixer on low speed until combined. Mix on medium speed for 2
minutes.
Spoon brownie batter in cupcake liners until about 2/3 full, then add cake mix for the last 1/3. Put in the oven for 20-25 minutes or until cupcake tops spring back when pushed.
I used this frosting to keep with my quick theme in Vanilla Dream flavor:
I bit into them and seriously thought I was in heaven! So did the kids!
Don't let his face fool you, he was making this face because he did not want his picture taken.
Just for fun, while I was cooking dinner and baking the cupcakes that day, I looked out my kitchen window and saw this hawk just chillin'. The light post is pretty close to my window, so to see a bird of that size sitting there was almost startling. I had my camera handy and took some pictures of him before he flew away.
