Neopolitan Cupcakes

Last weekend I made the most delicious cupcakes I had ever made, HANDS DOWN! They tasted exactly like Neapolitan ice cream. I found these on Pinterest (where else?) and for the most part, I followed the recipe.  I made them really super quickly too, right in the middle of making spaghetti for dinner that night! I did it while the water for the spaghetti was boiling, it was that quick! I'm all about quick...and I'm even more about DESSERT! Yum!
First, preheat the oven to 350. Then line your cupcake tin with cupcake liners.

Ingredients:
1 package of brownie mix



2 eggs







1/2 cup of vegetable oil


 1/4 cup of water






Whisk together the brownie mix, 2 eggs, 1/2 cup vegetable oil, and 1/4 cup water in a bowl. Stir just until fully mixed, about 50 strokes; set aside. 


In a mixing bowl, add:


1 box of strawberry cake mix (or any other flavor would taste yummy, but for the Neapolitan taste, go strawberry)










2 Tablespoons of vegetable oil 








1 1/3 cups of water





3 egg WHITES





Mix the cake mix, 2 tablespoons vegetable  oil, 1 1/3 cup water, and 3 egg whites in a large bowl with an electric mixer on low speed until combined. Mix on medium speed for 2 minutes.

Spoon brownie batter in cupcake liners until about 2/3 full, then add cake mix for the last 1/3.  Put in the oven for 20-25 minutes or until cupcake tops spring back when pushed.

I used this frosting to keep with my quick theme in Vanilla Dream flavor:







I bit into them and seriously thought I was in heaven! So did the kids!

Just for fun, while I was cooking dinner and baking the cupcakes that day, I looked out my kitchen window and saw this hawk just chillin'.  The light post is pretty close to my window, so to see a bird of that size sitting there was almost startling. I had my camera handy and took some pictures of him before he flew away.
